Even though it’s legitimately a massive inconvenience to myself and my employer, what would they actually try to pull if I just decided not to show up. I realize fines and jail time as well as a misdemeanor are on the table, but is that really even likely?

If you don't want to be there make it clear you support jury nullification (you'd aquit the defendant of an unjust law even if guilty).
