For example, is there old historic literature that outlines the Khazarian's religions and practices which we can look for similarities in the Talmud?

I'm looking for some concrete historic information if anyone has any. Thanks.

The Khazarians converting to Judaism isn't even contested really. The only part that is questionable is whether they had anything to do with the people who are today known as Ashkenazi. Most scholars say no, but some say otherwise. It's an interesting question anyways.
