Even all the different fish dishes, like you said, same handful of common spices and little of it. It must be quite a shock when they go to New Orleans and hit the restaurants. Get some of that Cajun spicy fish, gator and turtle. Craw dad season is the best because you can sub it in shrimp dishes. Weird how the tea thing caught on there, but it was coffee in the America's as we planned rebellion.
