You won't be able to pierce a skull on a walking target over and over with any sword, because the blade would either deflect or became stuck. If you want to penetrate, you should try a for that, and make sure, that you stir like crazy as soon as you're through, so that you scramble the tiny part of the zombie-brain that's still active.
Kriegsmesser are too long for closed spaces or when having other people around you. And so are Zweihänder.
Slicing off a neck with every stroke is not too impractical, if you train a little. The heavy, short, stiff, and curved blade of a Katana is going to make it much easier, when compared to the straight light springy blades from which european swords are made. I would agree, that european swords are superior, when it comes to fencing of fighting while wearing armor, but they're not when it comes to cutting off limbs on an industrial scale.
And I'd forget using anything onehanded like the saber or falchion, because one-armed swords are meant to be used with a shield, and doing heavy blows quickly becomes tiresome.
