Correct. The usage of technology depends on the community. Many, for instance, use electricity in their trades. They're not cutting wood with hand saws, for the most part.

Yes. They consider everything, and I mean everything, that isn't manual labour a luxury and thus is banned as sloth. Only tools allowed are the ones which are necessary, but none that make things easy. Of course, I only have a surface level on the amish.
There are lots of orders, each with different rules. Some are strict to the point where wheelbarrows aren’t allowed, others let their people own cell phones.
