You can join. It's just VERY difficult. Varying levels of difficulty depending on their specific local laws, but it's not impossible. The hardest part is accepting that your not joining a church like going from baptist to Methodist. Amish is literally a lifestyle. And there's no wiggle room

Yes. They consider everything, and I mean everything, that isn't manual labour a luxury and thus is banned as sloth. Only tools allowed are the ones which are necessary, but none that make things easy. Of course, I only have a surface level on the amish.
There are lots of orders, each with different rules. Some are strict to the point where wheelbarrows aren’t allowed, others let their people own cell phones.

They wouldn't fall into any of the required groups unless they happen to work at a larger company (like a large dairy or something). Because of this they wouldn't need any special exemption.
Starting a new religious group is probably a way out, but we know what the ATF thinks about those. I guess it depends if the current situation consolidates more power in the federal government or in the states.
