My thoughts on the organic are that you're getting something sprayed less with chemicals and has more nutrients because of the natural fertilizer and farming methods used. Giving a plant a chemical version of NPK verses a naturally broken down manure compost is going to yield very different nutrition content in the product. Scientist still can't identify all the chemical make up of any fruit or vegetable.
Would you rather eat fruit and vegetable or take a pill to get your vitamins? Rather which do you think is more effective. As long as it's not sprayed down with chemicals which end up poisoning you(at the lowest dose possible) and preventing your body from absorbing the nutrients, the natural way is always better.
Whether or not your produce is actually farmed organic is an entirely different subject. But if you know it is, it's worth it.

Best of luck. It's difficult and not sustainable where I am to keep animals if SHTF. basically green house and storing food is the only viable option, then hunting for meat.
