I know it’s an apples and oranges kinda question, or apples and something inedible. I dare say, I’d choose to work with cedar over snacking a dish with cheddar… though I am getting fairly hungry.

If you don’t have the ability to farm cedar yourself try ocooch hardwoods (ocoochhardwoods.com). I find their prices reasonable.
