I like it cooked and smothered with onions. Whats it like raw? Is it safe to eat? Interesting historical note. Arctic explorers that attempted to eat their sled dogs liver were poisoned. Dogs liver has toxic levels of vitamin B.

Yep, basically, you can't eat anything that has ever eaten a seal. No bear liver no dog liver if there is seal around. It will kill, for sure. Vitamin overload.

By my experience, (several decades) it's completely safe so long as you or your neighbor is the one raising the beast. Basically the same protocol as eating raw beef. (beef tartar). The cow can't be penned. They must also at least semi-free-range with chickens as the chickens eat the things that give them worms. Pretty simple TBH.

Having butchered a few animals and eaten raw as well I can say that you want it as fresh as possible and know where it came from and how it was raised.

Once the liver is frozen it changes the flavor and texture.
