I just realized it should be possible to go into graveyards and count headstones and dates and determine whether or not younger and younger people are dying etc.

Once a week take a walk in your local cemetery to document changes for the record? Cemetaries are great places for walking and outdoor time anyway.

Pretty easy to snap new headstones while there.

If its effective you can be sure they will start banning people from cemeteries but a lot can be gathered before then.

Findagrave.com has a very active volunteer base and through baseline on which to add but they are owned by ancestry.com who might start limiting data adds to hide data so best to report numbers other places as well.

Reporters have called local mortuaries, posing as students doing research. Deaths/funerals/cremations are NOT up in the last 5 years.

findagrave.com really useful as you said. Also look for obits in the newspapers. sometimes it details reasons but not always. Accidents are easily documented from news stories. The Mormons run a website with lots of info. familysearch.org Suicides often don't have it stated in obits.

New graves won't reflect the increasing popularity of cremation. Obit notices from funeral homes probably capture the number, gender, and age better than any other non-government source.
