Of course you can just hook a small laptop to your tv and use a wirelelss mouse and keyboard but it isn't as convenient as a roku style interface.

For those who don't know roku banned all the good channels like Alex Jones etc a few years back. Its completely controlled with the illusion of choices.

I have already done a network wide ad blocker paired with a recursive dns server

I'll be adding a vpn gateway to it and an encrypted tunnel for when I'm outside my network but still want its benefits

You can jailbreak any of them to do basically whatever. Just pick whichever one has the UI you prefer.

You'd be better off doing a websearch than having me explain it to you. The general process though is you plug the stick into your computer, download x program from the website, install it onto the stick, and you're good to go.

Keywords are going to be "jailbreak (name of your stick)". If the process really seems too intimidating, you can get them off of eBay easily for maybe $20 more than you would pay for the hardware by itself.

I, too am interested in hearing. I have used a Roku (never again), Kodi but it requires a network connection. Currently I load up a hard drive and connect it directly but it doesn't handle many file formats.
