If it's plumbed gas, I guess it's a matter of cost. If it's tanks, there's the "oh no we ran out of gas" in the middle of the cake. I know, you don't even know what's this gas in tanks I'm talking about... 3rd world, man. 3rd world.
I cooked on a propane stove for quite a while, it was interesting cooks differently than natural gas does. I suppose in the third world you'd probably be better off with a wood stove.
Wood stove is a dream, but too much trouble. It cooks like heaven, tho. Nothing like cancerous fumes making your meat delicious.
I’ve got a wood stove but it’s the kind for heating not cooking.
Not so old school ... many places (at least back East where I grew up) still have the big silver tanks outside.
