You can take hot showers off grid by using what is basically a large heavy duty plastic bag left in the sun for half a day, usually branded as a solar shower or something. Even when cold it'll heat up especially if left on roof shingles or a truck bedliner.

Well you're not really gonna last long if you don't. But for showers and more a simple gutter-> water reclamation container could work. It depends on how toxic the rainwater is where you are, and you can treat the barrel with small amounts of bleach and still be good to drink.
