Step 2: Upload as unlisted video to youtube.
Step 3: Use a youtube to mp3 converter site to get the audio. (At this stage, I would recommend cleaning up the audio with audacity and slowing it down about 10% to make the speech clearer.)

Does t YouTube automatically make a transcript of everything uploaded and can't you open it and just copy and paste it?

Maybe... I know they do Closed Captioning, so they do have the text. It's not great, though. I'd be curious to see if it exported as text.
