Gas provides more options in emergencies. Depending on the location, cheaper too.

I typically use an external thermostat when the cooking temp is a factor. I've found that my electric stove maintains the temperature more steadily than my gas stove does.

That may well be. But it simply means one has a more accurate thermostat than the other or placement in the appliance provides a more true reading. Both of which are independent of the heat source.

Btw, use of external thermometer is smart. Because inaccuracy is common for lower end appliances.
