Guys.. I hope you can help a fellow goy out

Im not getting jabbed or tested.. So i have a problem on my hands.. Im wanting to roam abit around, plannig on riding my bike from Denmark to Croatia next week, but I have a problem. Im planing to cross boarders without notifiying the governments of my whereabouts, But the thing is, I will be sleeping in hostels, And as far as I remember, The hostel needs a copy of your passport, but What im worried about is if they put any data into any system that communicates with the government systems and will notify them that there is a loose and untested goy in their country?

EDIT: Big part of the travel is for meeting others at hostels! very important factor.

I really hope you guys can help me out, I dont know where else to ask this kind of question. !

Why would you have to notify government of your whereabouts? Hostels don't communicate with foreign governments and i doubt they communicating with their own government systems about people who are staying in these hostels. They are checking documents for their own safety in case you break, steal property or injure someone.
