I’ve been using three monitors at work, for a decade. I became so accustomed to three at work that I got three for home. It felt odd missing a monitor. My new employer will only supply two and it’s messing with my workflow. Once you go three, there’s no going back.

I have a gtx970. I'm pretty sure it can handle 3 monitors at 1080p. It CAN handle 3 at 4k, doubtful it will be able to do smooth graphics intense things at that point though.
