Remember when corona started and there were cruise ships that wouldn't let the people off? That shit was ridiculous. Can you imagine? You're on a ship and 2 people on it got the chink flu so nobody can leave for an undisclosed amount of time. Fuck that.

But anyways, Let's say there is no corona. What company is the best, with the best experience to be had, and the best ships? Would it be perfectly fine to get one of the cheaper cabins and still have a lot of fun, or would it be way more worth the money to get a fancier, more expensive cabin?

Depends on what you like and where you like to go. If you want to see many ports of call and not have to fly each time then a cruise may be for you. Of course like anything else it's about the money. There are some great deals to the Caribbean and almost anywhere in the world. My last cruise was on Holland America in a presidential suite and there was little left to the imagination right down to a Butler and a 24/7 private chef and private balcony but that said no matter the level you won't be disappointed but that's Holland America. Do your homework because if you don't want older people there are lines that specialize in family's, younger people without kids, basically something for everyone's taste but if you assume every cruise is alike and are looking for some romance with your so, carnival may not be your best choice. Just Joogle and you'll find something to give you a great time. The only caveat I'd mention is if you're looking for a ship with gambling then plan on losing money. Cruise ships aren't as strictly regulated for gambling if at all. Good luck man and have a great time!
