You will make tremendous progress. What you are eating is by far the best thing you could eat (minus the potatoes). It is also the most nutrient dense. It will do wonders for insulin balance and response, allowing you to lose a great deal of weight.
On the issue of potatoes, they are quite starchy and will break down fairly quickly in the body, prompting an elevated insulin response. If you are looking to lose weight optimally, then this is the last thing you want, the greater your insulin levels and resistance, the farther you will be placed when it comes to acquiring fat adaptation. Fat adaptation plays a key role for weight loss because any deficits you impose upon yourself while sticking to a proper macronutrient distribution will result in your body easily switching to fat as fuel from carbohydrates. If your insulin remains uncontested, then this does not happen. Instead, the body will signal greater hunger intensity and frequency to make up the deficit or it will lower metabolic rate. This is mitigated with a carb-less eating pattern.
From my experiences, I lost a substantial amount of weight. What was most surprising about it was how relatively simple it was to maintain it largely because my hunger and satiety signaling were finally readjusted to the extent that ravenous chronic hunger was no longer felt. Instead, hunger became easy to ignore and before I knew it I found myself following an intermittent fasting routine which also helps regulate insulin resistance and response as effectively as eating properly. Together, the synergy between the two facilitated weight loss to unbelievable degrees.
In summation, I pursue obesity/weight loss within the context of hormonal balance in such that weight loss is relatively easy to achieve when hormonal imbalances are corrected through the consumption of food that adhere to a proper macronutrient distribution (Mostly fat, next to no carbs). DO this, and many hormones associated with the storage and withdrawal of energy, hunger, satiety, eventually correct themselves to the point where you will find yourself following eating patterns that pre-industrialization civilization regularly followed.
My experience too. I lost 14 pounds that way with way more energy.
