On those eggs, they must be fresh from the chicken, no washing.

Why is that? I can get them just curious.

Chickens excrete a slime which acts as a sealant. When the egg is layed, the slime coats the entire egg. Store bought eggs will have been washed, removing the sealant. Only unwashed eggs can be used for this reason.
