Real. Real Good! You can make it similar to duck confit, but with penguin and baby seal fat. Meat is succulent and fall-off-the-bone good if cooked in baby seal rendered fat. It has to be baby seal, otherwise it gets gamey. Also, make sure your penguin is young and fresh. The older ones are stringy (too much sinew), but yearling penguins are perfect.
