I don't have anything like an actual coffee roaster or hot air popcorn popper, so looking for advice on how to do it in a pan or perhaps oven.

Well, as a rule of thumb, roasting to 442 is usually good (if you have a submersed bean probe) and brewing is good usually at 200 degrees for 3 minutes. Grinding is critical, a proper burr grinder is the only way to get a decent size particle to get proper taste. This alone can be a massive difference in the taste and quality of coffee. Hario makes a fine one for like 35$.

I may get one. I like to make my wife’s coffee for her sometimes.

I’ve gotten the water/bean ratio pretty good and the grind is decent but maybe could be better.

If it’s a whirly grinder with a high speed blade, keep it for spices, but they suck for coffee. The difference is profound. It also won’t bitter in the cup as it cools due to less dust sized particles making it past the filter.
