Could just say "OK" and when they ask for medical records as proof, decline. If they fire you for refusing to turn over medical records, you've got a great lawsuit.

He won't. Employers are allowed to require you to disclose medical records for a "legitimate business interest." They're not going to have a hard time convincing a judge that preventing everyone in the company from dying of the China virus is a legitimate business interest.
OP might be able to get an exemption, e.g. allergies.
Yes. If he tells his doctor about his polysorbate allergy, or reports an adverse reaction to a past immunization, he will probably be advised to avoid the vaccine.
