Its a staple but not one I've picked to do myself as I'm just not sure how to make it amazing. I tried blackened chicken a long time ago and it was just okay.

I do the cacciatore regularly. I also have a rotisserie for my grill that I do whole chicken on. Another good option is chicken enchiladas.

I haven't tried cacciatore, enchiladas can be good but the sauce it the real make it or break it part.
