Good ole fashioned beer brat but with a twist. I've found that a sour beer or gose gives them an extremely tangy/tart taste. Some good sausages from a local shop is best. Soak overnight in the sour beer, drink one or two for yourself as well. Prior to grilling, pour the beer, brats and some more beer (cheap/normal beer is fine for boiling but throw in a can of sour beer too) into a stock pot, add onions, bell peppers and boil for about 5-10 min or so. Drink a beer for yourself. You want to boil them to a point of where you could eat them out of the pot. Set the grill to med to med-high, throw the onions and peppers on a grill try and get those going. Grill the brats to your liking. Don't over grill because they are already boiled.

Serve how you like; buns, by themselves with maybe some kraut or german potatoe salad. Do make sure to drink one of the sour beers along with dinner.

If you don't like sour beer, skip drinking it but it does wonders for brats.

I found out about that one when I found an old gose in the back of the fridge and thought, why not. Completely blew my mind and sent my taste buds to space.

Similar to a chicken pot pie but 68% better.

Sea bass baked in salt crust. Fennel seeds, lemongrass, ginger, olive oil, pepper.

Might have to swap the fennel seeds for garlic on that one, I almost never cook without garlic

Its a staple but not one I've picked to do myself as I'm just not sure how to make it amazing. I tried blackened chicken a long time ago and it was just okay.

Sear the out side of pork chops with oil, salt, pepper, garlic and flour.

Make a rue using the same mix and some chicken broth and onions

Submerge in the rue/gravy

Simmer for and hour and serve with mash potatoes

Not your fault, it’s crappy pig. Commodity pork is garbage, find. Heritage hog like red wattle, large black, American guinea hog. Totally differen meat. Cook to 142 F fast and hot, use a digital instant thermometer. Some salt and pepper

I need to get a new meat thermometer, my last one I put in the dish washer and it turns out it was not dish washer safe.
