Depends on what's already installed at your place and local natural gas vs. electric prices.
I say gas if you can get it cheap, like in Texas where it's produced for example it's a better deal.
If your house uses gas for the furnace chances are that's the better deal. And you're already getting a bill from electric & gas companies both. So it's not like you're paying a new account fee or anything in that case.
Gas appliances are what I use currently. Furnace Stove.
I think you're in a place where the decision isn't so clear cut. So you might have to do the math on energy costs but the cost of the appliance itself will probably dwarf the payback at least for 5 years or so
At least when it comes to a stove, gas is far superior you just can't get a ripping hot pan on electric.
I have often wondered if we could survive the winter on nothing but our wood stove.

I owned an appliance repair business for years until I retired. Electric stoves failed a lot and that was 'my bread and butter'. Damn right I only go with gas stoves. Cheaper fuel, better temp control, longer lasting machines. But wait, my kid owns my appliance repair biz now. So definitely go with electric stoves. Kid needs the extra business. Please pay in cash.
I'm a mechanic. I've got the exact same attitude regarding advising others on cars.
I had electric it broke so I replaced it with a gas stove I got off craigslist for 50$ it’s been working perfectly for 7 months so far.
Electric would mean less to clean. If provided by solar or wind on your property it's even more off grid than gas.
Gas would be easier and cheaper to set up by far though.
Gas seems to heat better if you ask me, but I see the utility of electric if you have off grid power.
Induction is probably as good as gas for even heating, but it might break more easily and cost more.
You could make gas off grid too I suppose.
How would you do that? Maybe a manure based system that fed the methane into a storage system? Just spit balling.
