My guess is the dindu knew something the cop did (they worked together) and tried to blackmail him.

So the only way for the cop to get rid of him without raising suspicion was to fake an arrest and suffocate him pretending it was an accident.

Sounds plausible, yet the logistics for that to occur seem too convoluted to me. First, Floyd had to try to pass a bad check, then the store had to call the cops, then that particular cop had to be on duty and answer that particular call. Unless the cop was involved in the phony check thing somehow. Just seems unlikely.
