Because fezzes are COOL!

Why do they have scimitars in their emblem?

Another good question. Do you know?

No clue. Star, moon, scimitar, egyptian head.

The fez was favoured in Turkey and the Ottoman Empire because it could be worn while touching the forehead to the ground in prayer. A lot of the other symbols (crescent, star) are reminiscent of the Ottoman Empire, the Crusades, and other mystic rubbish. (Now we have to kill you.)

(There's also a great joke to which your question is the setup line.)

To hide their yarmulkes.
