Well, first, there's plenty of records that support the holocaust happening, and those records are pretty easily accessed. Also, all the other atrocities, while certainly larger in terms of number of people killed, were leaders doing it to their own people or one population. What some people forget is that the 11 million people estimated people killed did include 6 million Jews, but also included gays, Jehovah's Witnesses, Gypsies, and the disabled, among others. Hence, Hitler's is seen as worse, as he tried to kill multiple different populations he viewed as subhuman.
They are sub human. Why is it a crime to deny the holocaust in European nations if it is so easily verified?

Yeah, that's probably why holocaust denial is illegal in those countries: most people aren't exactly keen on a repeat performance of the Holocaust or WWII.
