Deeeeep dish in a 12 inch cast iron pan lubed up with bacon grease with coarse ground cornmeal.

edit: I also can get down with a Sicily ital-nigger style rectangle in the baking pan extra thin crust.

I like both, but if I am eating somewhere new I would usually opt for thin because it is by far easier to do well.
