I'm hoping to can some tomatoes this year (once I fix those fuckers' calcium deficiency), and I'd read that sometimes you have to add acid if you want to do boiling water processing, but I thought tomatoes were pretty acidic already hence my curiousity. Anyway, it's something I will research when the time comes.

I know she doesn’t add acid when she does tomatoes, let me know how it works out.
