It's BBQ time for us today. Pork bellies, neck steaks, some pork and chicken on a stick (pollo fino). Bread and tzatziki as sides an dips.

I think I'm gonna make braised brisket, roast veggies and mash potatoes.

Sounds delicious, gave me an idea to try and roast some thick, marinated potato slices.

I marinate them (for a couple hours) in buttermilk, bay leaves, thyme, rosemary, crushed garlic cloves, shallots, sea salt, pepper, a little paprika. Then take them out, dispose them on an oven grill and sprinkle both sides with corn starch (for crispiness)

Oven at 190ºC (375ºF) until golden brown.

Eat them with Gravy (blended roast veggies and the brisket juice) or freshly made Ranch.
