I could something like this happening for food apps. Instead of each company having their own app you have two AIs talking to each other to complete your order. Something like hey Grok, I want a burrito what are my options, once you decide it contacts the AI at the food place for you and places the order.

Other than that, it sounds a bit weird to me. You'll still want a phone for many other applications. Most of all talking to texting to people. How is an AI supposed to replace that?
