The way PCB services are today, you'd be crazy not to use them.
The last one I layed out, etched and drilled myself was a single layer one for a production machine at work. Used Platine ST on an ATARI and Iron(III)-Chloride, which was discarded safely into some drain. Must have been early 90s. When I look at that layout today, I blush from emabarassment :). Also these little boards are still in use daily, so there's that.
The video makes a good case for when it makes sense to use this technology and when it doesn't. Sometimes people do stuff just because they can. Good opportunity to learn and maybe improve this stuff.
